- 1 ½ tablespoon extra virgin olive oil
- 1 medium-sized onion, chopped
- 2 garlic cloves, minced
- 1 lb (450 grams) carrots, sliced or cubed
- 1 â…“ cup (250 grams) green or brown lentils, rinsed and drained
- 2 tablespoons tomato paste
- ½ teaspoon paprika
- ½ teaspoon cumin
- ½ teaspoon dried thyme
- 1 bay leaf
- 6 cups (1.5 L) low sodium vegetable broth
- 1 to 1 ½ teaspoon fine salt, to taste
- â…› teaspoon black pepper
- ½ teaspoon onion powder
- 1 tablespoon lemon juice, or to taste
- 3 tablespoons fresh parsley, chopped
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the chopped onion and cook until it turns soft and translucent, about 5 minutes.
- Next, add the minced garlic, paprika, and cumin. Cook while stirring until fragrant, for about 1 minute.
- Add in the sliced or cubed carrots, lentils, tomato paste, thyme, bay leaf, vegetable broth, 1 teaspoon of salt, and several grinds of black pepper.
- Bring the mixture to a boil, then reduce to a gentle simmer. Cover with a lid and cook until the lentils are tender, which should take about 25 to 30 minutes.
- Once the lentils are cooked, turn off the heat and stir in the lemon juice and onion powder.
- Taste and adjust the seasoning with additional salt, pepper, or more lemon juice, if desired.
- For a creamier texture, allow the soup to cool slightly, then transfer about 2 cups to a blender and blend until smooth.
- Return this to the main pot and stir until well combined.
- Finish by sprinkling fresh chopped parsley on top and serve with a drizzle of extra virgin olive oil and crusty bread.
Notes
Make-ahead flavors develop beautifully if made a day in advance. Store leftovers in an airtight container in the fridge for up to 4 days.
