Description

A warm and comforting blend of earthy carrots and sweet apples, perfect for chilly days.


Ingredients

  • 2 cups carrots, peeled and chopped
  • 2 apples, peeled and chopped
  • 4 cups vegetable or chicken broth
  • 1 cup fat-free half and half
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground ginger
  • 1 tablespoon olive oil (optional)

Instructions

  1. Sauté the veggies: In a large pot, heat olive oil over medium heat. Add the chopped carrots and apples, and sauté for about 5 minutes until they begin to soften.
  2. Add the broth: Pour in the broth and bring to a boil. Reduce heat and simmer for about 20 minutes, or until the carrots and apples are tender.
  3. Blend until smooth: Use an immersion blender to puree the soup until it’s silky and smooth.
  4. Season it up: Stir in the fat-free half and half, salt, pepper, and ginger.
  5. Heat gently: Warm the soup gently before serving, and adjust seasoning to taste.

Notes

This soup is an excellent make-ahead option! Prepare and refrigerate it for up to three days, or freeze for up to three months.
