Ingredients

- 2 cups cooked rice
- 2 cups cooked chicken, shredded
- 1 cup chicken broth
- 1 can cream of chicken soup
- 1 cup frozen mixed vegetables
- 1 cup shredded cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the cooked rice, shredded chicken, chicken broth, cream of chicken soup, mixed vegetables, garlic powder, onion powder, salt, and pepper in a large mixing bowl. Stir until everything is well mixed.
- Pour the mixture into a greased baking dish and spread evenly.
- Sprinkle the shredded cheddar cheese on top.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
You can customize this dish by adding black beans, fresh herbs, sautéed mushrooms, or mixing in garlic bread crumbs on top.
