Description

A warm, creamy Chicken and Rice Casserole that brings comfort and nostalgia, perfect for busy weeknights.


Ingredients

  • 2 cups cooked rice
  • 2 cups cooked chicken, shredded
  • 1 cup chicken broth
  • 1 can cream of chicken soup
  • 1 cup frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the cooked rice, shredded chicken, chicken broth, cream of chicken soup, mixed vegetables, garlic powder, onion powder, salt, and pepper in a large mixing bowl. Stir until everything is well mixed.
  3. Pour the mixture into a greased baking dish and spread evenly.
  4. Sprinkle the shredded cheddar cheese on top.
  5. Cover the dish with aluminum foil and bake for 25 minutes.
  6. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  7. Let it cool for a few minutes before serving.

Notes

You can customize this dish by adding black beans, fresh herbs, sautéed mushrooms, or mixing in garlic bread crumbs on top.
