Description

Ingredients

Instructions

  1. Heat the olive oil in a pan over medium heat, letting it shimmer.
  2. Add the chickpeas, and sauté them for a few minutes until they’re lightly golden and fragrant, stirring occasionally.
  3. Create a small space in the pan by pushing the chickpeas to the side, and crack the eggs directly into the pan.
  4. Cook the eggs to your desired doneness, whether that’s sunny-side up with a runny yolk or over-easy for a bit more firmness.
  5. Top everything with the chopped sun-dried tomatoes, sprinkling them over like tiny, tangy jewels, and serve warm.

Notes
