Ingredients

  • 1 pound juicy steak (your favorite cut)
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup cooked rice (white or brown)
  • 1 tablespoon lime juice (for rice)
  • 1/4 cup fresh cilantro, chopped (for rice)
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or fresh)
  • 1 ripe avocado, sliced
  • Creamy cilantro lime sauce for drizzling

Instructions

  1. In a mixing bowl, marinate the steak in lime juice, chopped cilantro, minced garlic, salt, and pepper for at least 30 minutes.
  2. Cook the steak on a grill or in a pan over medium-high heat to your desired doneness, then let it rest before slicing.
  3. Prepare the cilantro lime rice by cooking rice as directed, then mixing in lime juice, chopped cilantro, and a pinch of salt.
  4. Layer cooked cilantro lime rice as the base in a bowl, then add black beans and corn.
  5. Slice the grilled steak and arrange it over the beans and corn, top with avocado slices.
  6. Drizzle with creamy cilantro lime sauce and serve fresh.

Notes

Make ahead by marinating steak the night before. Leftover rice can be mixed with lime juice and cilantro before layering.
