Description

A flavorful escape featuring marinated steak atop zesty cilantro lime rice, black beans, corn, sliced avocado, and creamy cilantro lime sauce.

Ingredients

Scale
  • 1 pound steak (flank or sirloin)
  • 1/4 cup lime juice (freshly squeezed)
  • 1/4 cup fresh cilantro (chopped)
  • 3 garlic cloves (minced)
  • Salt and pepper (to taste)
  • 1 cup rice (white or brown)
  • 1 cup black beans (drained and rinsed)
  • 1 cup corn (canned or frozen)
  • 1 ripe avocado (sliced)
  • Additional cilantro (for garnish)
  • Creamy cilantro lime sauce (store-bought or homemade)

Instructions

  1. Marinate the Steak: Combine lime juice, chopped cilantro, minced garlic, salt, and pepper. Marinate the steak for at least 30 minutes.
  2. Cook the Steak: Grill or sear the steak for 4-6 minutes on each side, or until desired doneness. Let it rest before slicing.
  3. Prepare Cilantro Lime Rice: Cook the rice according to package directions. Fluff and mix in additional lime juice and chopped cilantro.
  4. Assemble the Bowls: Layer cilantro lime rice in a serving bowl, followed by black beans, corn, and sliced avocado. Top with sliced steak.
  5. Drizzle with Sauce: Finish with a drizzle of creamy cilantro lime sauce.
  6. Enjoy: Dig in and relish every bite of your homemade bowl!

Notes

Make ahead by marinating the steak and preparing the rice a day in advance. Store leftovers in an airtight container in the fridge for up to three days.
