- 4 very large green bell peppers or about 5 small ones
- 1 (15-ounce) can tomato sauce
- 1/2 pound ground beef or turkey
- 1/3 cup chopped onion
- 1 cup cooked brown or white rice
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1/8 teaspoon garlic powder
Instructions
- Preheat your oven to 350°F (175°C). While it heats up, cut the tops off the peppers and remove the seeds.
- Place the peppers in a large saucepan and cover them with water. Bring the pot to a simmer and cook the peppers for about 3 minutes, just until they are slightly soft.
- Drain the peppers and rinse them under cool water. Set them aside on paper towels to drain.
- In a skillet over medium heat, add the ground beef and chopped onion. Cook until the meat is browned and no pink remains, then drain any excess fat.
- Mix in the salt, black pepper, cooked rice, garlic powder, and half of the tomato sauce, stirring well to combine.
- Spoon the savory mixture into each pepper, packing it gently but firmly.
- Top each stuffed pepper with the remaining half of the tomato sauce, making sure they are generously coated.
- Place the stuffed peppers upright in an ungreased baking dish and cover with foil.
- Bake in the preheated oven for 25-30 minutes, until the peppers are tender and the flavors have melded beautifully.
- Serve warm and enjoy the heartfelt flavors with loved ones.
Notes
These stuffed peppers can be customized with additional vegetables or topped with cheese. They freeze beautifully for later use.
