Description

Comforting and hearty stuffed peppers filled with beef, rice, and spices, perfect for family dinners.


Ingredients

  • 4 very large green bell peppers or about 5 small ones
  • 1 (15-ounce) can tomato sauce
  • 1/2 pound ground beef or turkey
  • 1/3 cup chopped onion
  • 1 cup cooked brown or white rice
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C). While it heats up, cut the tops off the peppers and remove the seeds.
  2. Place the peppers in a large saucepan and cover them with water. Bring the pot to a simmer and cook the peppers for about 3 minutes, just until they are slightly soft.
  3. Drain the peppers and rinse them under cool water. Set them aside on paper towels to drain.
  4. In a skillet over medium heat, add the ground beef and chopped onion. Cook until the meat is browned and no pink remains, then drain any excess fat.
  5. Mix in the salt, black pepper, cooked rice, garlic powder, and half of the tomato sauce, stirring well to combine.
  6. Spoon the savory mixture into each pepper, packing it gently but firmly.
  7. Top each stuffed pepper with the remaining half of the tomato sauce, making sure they are generously coated.
  8. Place the stuffed peppers upright in an ungreased baking dish and cover with foil.
  9. Bake in the preheated oven for 25-30 minutes, until the peppers are tender and the flavors have melded beautifully.
  10. Serve warm and enjoy the heartfelt flavors with loved ones.

Notes

These stuffed peppers can be customized with additional vegetables or topped with cheese. They freeze beautifully for later use.
