Description
A creamy and comforting bowl of rice topped with tender chicken simmered in a luscious coconut sauce, perfect for cozy dinners.
Ingredients
Scale
- 1 lb boneless, skinless chicken breasts
- 1 can coconut milk
- 1 tbsp soy sauce
- 1 tsp lime juice
- 2 cloves garlic
- 1 tsp ginger
- 2 cups cooked rice
- 1 tbsp vegetable oil
- Salt and pepper to taste
- Fresh cilantro or green onions
Instructions
- Prepare the Chicken: Start by slicing your chicken breasts into bite-sized pieces. Season them generously with salt and pepper.
- Sauté Aromatics: In a large skillet, heat the vegetable oil (or coconut oil!) over medium heat. Add the minced garlic and grated ginger, stirring until fragrant—about 1 minute.
- Cook the Chicken: Toss the chicken pieces into the skillet and cook until golden brown and cooked through, around 6-8 minutes.
- Add Creaminess: Pour in the coconut milk, soy sauce (or tamari), and lime juice. Bring to a gentle simmer for about 5 minutes.
- Combine with Rice: Stir the cooked rice into the skillet. Mix well to coat the rice with the sauce and heat through.
- Garnish and Serve: Spoon into bowls and finish with fresh cilantro or sliced green onions on top.
