Description

A cozy baked oatmeal that tastes just like coffee cake, perfect for breakfast or a delightful snack.


Ingredients

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cups almond milk (or other milk)
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1/2 cup pecans, chopped
  • 2 tablespoons coconut oil, melted (optional)
  • 1/4 cup brown sugar (for streusel)
  • 1/4 cup flour (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with a touch of coconut oil.
  2. In a large bowl, mix together the rolled oats, baking powder, cinnamon, and salt until combined.
  3. In another bowl, whisk together the almond milk, maple syrup, vanilla extract, and melted coconut oil (if using).
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the chopped pecans, giving the mixture a lovely crunch.
  6. Pour the oatmeal mixture into the prepared baking dish, spreading it evenly.
  7. In a small bowl, combine the brown sugar and flour for the streusel topping. Sprinkle it over the oatmeal mixture to create a sweet topping.
  8. Bake for 30-35 minutes or until set and lightly golden on top.
  9. Allow cooling for a few minutes before cutting into squares and serving. Enjoy!

Notes

Prepare the wet and dry ingredients separately the night before for a quick bake in the morning. Store leftovers in an airtight container for up to 5 days.
