Description

A vibrant salad with crunchy cabbage, sweet carrots, and zesty chipotle dressing, perfect for weeknight dinners or potlucks.


Ingredients

  • 4 cups shredded cabbage
  • 1 cup shredded carrots
  • 1/2 red onion, thinly sliced
  • 1 cup Fritos
  • 1/2 cup chipotle dressing
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice

Instructions

  1. Shred the cabbage and carrots, and thinly slice the red onion.
  2. In a large bowl, combine the cabbage, carrots, red onion, and cilantro.
  3. Add the Fritos and toss gently.
  4. Drizzle with chipotle dressing and lime juice, and mix well.

Notes

Make the veggies a day ahead but wait to add dressing and Fritos until just before serving to keep everything crunchy.
