- 1 lb chicken thighs, diced
- 1 bell pepper, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups diced tomatoes (canned or fresh)
- 2 cups okra, sliced
- 2 tsp Cajun seasoning
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
Instructions
- In a large pot, cook the sliced sausage over medium heat until browned.
- Add the diced chicken and cook until lightly browned.
- Stir in the onions, bell peppers, and garlic; cook until softened.
- Add the diced tomatoes and okra, stirring to combine.
- Pour in the chicken broth and bring to a boil.
- Add the pasta and Cajun seasoning, then reduce heat and simmer until the pasta is cooked through.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions.
