Ingredients

  • 1 lb smoked sausage, sliced
  • 1 lb chicken thighs, diced
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups diced tomatoes (canned or fresh)
  • 2 cups okra, sliced
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

  1. In a large pot, cook the sliced sausage over medium heat until browned.
  2. Add the diced chicken and cook until lightly browned.
  3. Stir in the onions, bell peppers, and garlic; cook until softened.
  4. Add the diced tomatoes and okra, stirring to combine.
  5. Pour in the chicken broth and bring to a boil.
  6. Add the pasta and Cajun seasoning, then reduce heat and simmer until the pasta is cooked through.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped green onions.
