- 2 chicken breasts
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 tomatoes, diced
- 1 chipotle pepper in adobo sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Corn or flour tortillas
- Fresh cilantro, chopped
- Cotija cheese
- Avocado, sliced
- Sour cream
- Lime wedges
Instructions
- Boil the chicken breasts in salted water until fully cooked, about 15-20 minutes. Remove and shred.
- Heat the olive oil in a pan over medium heat. Add the sliced onions and sauté until translucent.
- Add the minced garlic and diced tomatoes; cook until tomatoes turn into a rich sauce.
- Stir in the chipotle pepper and shredded chicken, seasoning with salt and pepper. Let simmer for 10 minutes.
- Serve in warm tortillas or bowls, topped with cilantro, Cotija cheese, avocado, sour cream, and lime juice.
