A heartwarming and comforting soup featuring tender ground beef, fresh vegetables, and rice in a savory broth—perfect for chilly days.

Ingredients

Scale
  • 1 pound ground beef (or turkey)
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup tomato sauce
  • 3 cups beef broth
  • 1 cup rice (white or brown)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Brown the ground beef (or turkey) with the chopped onion, bell pepper, and minced garlic in a skillet until fully cooked. Drain any excess fat.
  2. Transfer the meat mixture to the crock pot.
  3. Add the diced tomatoes, tomato sauce, beef broth, rice, Italian seasoning, salt, and pepper to the crock pot. Stir everything together gently.
  4. Cover the crock pot and set it to cook on low for 6-8 hours or high for 3-4 hours.
  5. Stir in the shredded cheese just before serving, allowing it to melt beautifully into the soup.
  6. Serve warm, ladling generous portions into bowls and enjoy the comforting embrace of home-cooked goodness.
