Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup almond flour
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup marinara sauce (sugar-free if desired)
  • 1 cup mozzarella cheese, shredded
  • 2 eggs, beaten
  • Olive oil for frying

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix together almond flour, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper until well combined.
  3. Dip each chicken breast into the beaten eggs, allowing any excess to drip off, then coat with the almond flour mixture, pressing gently to ensure a good coating.
  4. Heat olive oil in a skillet over medium heat. Fry the chicken until golden brown on both sides, about 3-4 minutes per side.
  5. Transfer the fried chicken to a baking dish. Spoon marinara sauce over each breast, then sprinkle with mozzarella cheese.
  6. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and cheese is bubbly and slightly golden.
