- 4 chicken breasts
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup spinach
- 1/2 cup sun-dried tomatoes
- 1/2 cup Parmesan cheese
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat the olive oil in a large pan over medium heat. Season the chicken breasts with salt and pepper. Add them to the pan and cook until browned on both sides and fully cooked, about 6-7 minutes per side. Remove the chicken from the pan and set aside.
- Add the minced garlic to the same pan and sauté for about 30 seconds, until fragrant.
- Pour in the chicken broth, then add the orzo and sun-dried tomatoes. Bring to a boil, reduce the heat, cover, and simmer for about 10-12 minutes, or until the orzo is tender.
- Stir in the heavy cream, Parmesan cheese, and spinach until the spinach wilts into the creamy mixture.
- Return the cooked chicken to the pan, ensuring each piece is well-coated in the sauce.
- Serve hot, garnished with fresh basil.
