- 1 cup all-purpose flour
- 1/2 cup oats
- 1/4 cup brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup yogurt
- 1/4 cup milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease a mini muffin tin or line it with mini cupcake liners.
- Mix together the all-purpose flour, oats, brown sugar, baking powder, baking soda, and salt until well combined.
- Combine the wet ingredients: yogurt, milk, vegetable oil, and vanilla extract in another bowl. Whisk until smooth.
- Pour the wet ingredients into the dry ingredients, and stir gently until just combined. Be careful not to overmix; a few lumps are okay!
- Fold in the mini chocolate chips gently, ensuring they are evenly distributed throughout the batter.
- Fill each muffin cup about 2/3 full with the batter, making sure they’re all uniform.
- Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool slightly in the pan before transferring to a wire rack to cool completely.
Notes
These muffins can be made in advance and stored in an airtight container for up to 3 days. They freeze well too!
