Description

A comforting, easy-to-make Mexican pizza featuring layers of seasoned meat, refried beans, and melted cheese, perfect for weeknight dinners or family gatherings.

  • 1 packet taco seasoning (or 2 Tbsp homemade blend)
  • 2/3 cup water
  • 8 small (6-inch) flour tortillas (or corn tortillas, lightly fried)
  • 1 can (15 oz) refried beans
  • 1/4 cup water (to thin beans slightly)
  • 1 cup red enchilada sauce (or mild taco sauce)
  • 2 cups shredded Mexican blend cheese (or cheddar/monterey jack)
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/4 cup sliced black olives (optional)
  • Oil for frying (or cooking spray if baking)

Instructions

  1. Cook the Meat: In a skillet, cook the ground beef over medium heat until browned, stirring occasionally. Drain any excess fat. Add the taco seasoning and 2/3 cup of water, allowing it to simmer for about 5 minutes until thickened.
  2. Warm the Beans: In a small saucepan, warm the refried beans with 1/4 cup of water over low heat, stirring until smooth and creamy.
  3. Prepare the Tortillas: Fry the tortillas in a small amount of oil until golden and crispy (about 1-2 minutes per side), or alternatively, brush them with oil and bake them in a preheated oven at 400°F for 5–7 minutes, flipping halfway through.
  4. Assemble the Pizzas: On a baking sheet, lay one tortilla down as your base. Spread a generous layer of warm refried beans, followed by the seasoned meat. Top it with another tortilla, then pour over the red enchilada sauce, and sprinkle with cheese, diced tomatoes, green onions, and olives (if using).
  5. Bake to Perfection: Place the baking sheet in the oven and bake at 400°F for 8–10 minutes, or until the cheese is beautifully melted and bubbly.
  6. Serve it Up: Once done, slice the Mexican pizza into quarters and serve hot alongside extra taco sauce and a dollop of sour cream, if desired.
