- 1 pound ground turkey
- 1 can pumpkin puree
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 2 cups chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, cooking until soft and fragrant.
- Add the ground turkey, breaking it apart with a wooden spoon, and cook until browned, stirring frequently.
- Stir in the chili powder, cumin, salt, and pepper, letting the spices meld with the turkey for about a minute.
- Mix in the pumpkin puree, black beans, kidney beans, diced tomatoes (with their juices), and chicken broth. Stir well to combine.
- Bring to a boil, then reduce the heat and let it simmer for 20-30 minutes, stirring occasionally.
- Taste and adjust the seasonings as needed.
- Serve hot, garnished with your favorite toppings.
