- 2 pounds zucchini
- 1 teaspoon salt
- 1 large egg
- 1 large red onion, thinly sliced
- 2 cloves garlic, grated
- 1 teaspoon dried oregano (or dill)
- ¾ cup all-purpose flour
- 2 teaspoons baking powder
- ¾ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons extra virgin olive oil
- 4 ounces crumbled feta cheese (optional)
Instructions
- Grate the zucchini and toss it with 1 teaspoon of salt in a colander. Let it sit for about 10 minutes to release excess water.
- Squeeze out as much moisture from the zucchini as possible.
- In a bowl, beat the egg and add the squeezed zucchini, feta (if using), red onion, garlic, oregano, flour, baking powder, salt, and pepper. Mix until you have a thick, cohesive batter.
- Heat olive oil in a skillet over medium-high heat. Drop spoonfuls of the batter into the pan and flatten them gently. Cook for 3-4 minutes on each side until golden and crispy.
- Transfer the cooked fritters to a paper towel-lined plate to drain excess oil. Serve immediately.
