Description

A comforting and rich dish of cheese tortellini enveloped in a creamy sauce with juicy steak and aromatic garlic.


Ingredients

  • 20 oz cheese tortellini
  • 1 lb steak (sirloin or ribeye)
  • Salt
  • Black pepper
  • Garlic powder
  • Smoked paprika
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1 1/4 cups parmesan, shredded or freshly grated
  • Parsley, chopped (optional)
  • Red pepper flakes (optional)
  • Cracked black pepper (optional garnish)

Instructions

  1. Start by bringing a large pot of salted water to a boil. Cook the cheese tortellini according to package instructions until they are al dente. Drain and set aside, keeping a splash of pasta water for later.
  2. Meanwhile, season your steak generously with salt, black pepper, garlic powder, and smoked paprika.
  3. In a large skillet, heat the olive oil over medium-high heat. Once shimmering, add the steak. Sear for 3–4 minutes on each side for medium-rare, or to your desired doneness. Remove the steak from the pan and let it rest on a cutting board.
  4. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Be careful not to burn it!
  5. Pour in the heavy cream and milk, stirring to combine with the butter and garlic. Let it simmer gently for about 3–5 minutes, until slightly thickened.
  6. Stir in the parmesan cheese until melted and smooth. If the sauce is too thick, add a bit of the reserved pasta water to loosen it.
  7. Chop the rested steak into bite-sized pieces and return it to the skillet, along with the cooked tortellini. Toss everything together in that heavenly creamy sauce until well coated.
  8. Season to taste with more salt, pepper, and red pepper flakes, if desired. Top with fresh parsley for a pop of color before serving.
  9. Serve immediately, garnished with more parmesan and cracked black pepper if you like!

Notes

For a make-ahead option, prepare the tortellini and creamy sauce separately. Combine and heat just before serving.
