- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen cranberries
- Zest of 1 orange
- 1/2 cup brown sugar (for streusel)
- 1/4 cup all-purpose flour (for streusel)
- 1/2 teaspoon ground cinnamon (for streusel)
- 2 tablespoons cold butter (for streusel)
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- Mix together 1 1/2 cups flour, sugar, baking powder, baking soda, and salt in a large bowl until combined.
- Whisk together the melted butter, egg, milk, and vanilla extract in another bowl until smooth.
- Combine the wet ingredients with the dry ingredients, stirring until just mixed. Gently fold in cranberries and orange zest.
- Prepare the streusel by mixing brown sugar, 1/4 cup flour, and cinnamon, then cut in the cold butter until crumbly.
- Fill muffin cups about 3/4 full with batter, and sprinkle streusel on top.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool before serving.
Notes
Muffins can be made a day in advance and stored in an airtight container. They also freeze well for later enjoyment.
