Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen cranberries
  • Zest of 1 orange
  • 1/2 cup brown sugar (for streusel)
  • 1/4 cup all-purpose flour (for streusel)
  • 1/2 teaspoon ground cinnamon (for streusel)
  • 2 tablespoons cold butter (for streusel)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Mix together 1 1/2 cups flour, sugar, baking powder, baking soda, and salt in a large bowl until combined.
  3. Whisk together the melted butter, egg, milk, and vanilla extract in another bowl until smooth.
  4. Combine the wet ingredients with the dry ingredients, stirring until just mixed. Gently fold in cranberries and orange zest.
  5. Prepare the streusel by mixing brown sugar, 1/4 cup flour, and cinnamon, then cut in the cold butter until crumbly.
  6. Fill muffin cups about 3/4 full with batter, and sprinkle streusel on top.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool before serving.

Notes

Muffins can be made a day in advance and stored in an airtight container. They also freeze well for later enjoyment.
