Instructions
- Heat olive oil over medium heat in a large skillet.
- Season the salmon fillets with salt and pepper, then add them to the skillet.
- Cook until golden brown on both sides, about 4-5 minutes per side. Remove and set aside.
- Add minced garlic and chopped sun-dried tomatoes to the skillet, sautéing for 1-2 minutes until fragrant.
- Toss in fresh spinach and cook until wilted.
- Pour in heavy cream and stir, simmering until the sauce thickens.
- Return salmon to the skillet, allowing it to soak up the sauce.
- Serve with sauce over the top, garnished with fresh parsley if desired.
