Ingredients

  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Cook the gnocchi according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic and sauté until fragrant.
  4. Once the garlic is golden, toss in the fresh spinach and cook until wilted.
  5. Pour in the heavy cream and let it come to a gentle simmer.
  6. Stir in the crumbled feta cheese, letting it melt into the sauce.
  7. Add the cooked gnocchi to the skillet, gently stirring to coat.
  8. Serve hot, topped with Parmesan cheese if desired.

Notes

Prep the spinach and feta sauce in advance and add the gnocchi when ready to serve. Store leftovers in an airtight container for up to three days.
