Description

Ingredients

  • 1 pound gnocchi
  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the gnocchi according to the package instructions. Once they’re al dente, drain them and set aside.
  2. Sauté the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, being careful not to burn it.
  3. Wilt the fresh spinach, cooking until it wilts down.
  4. Add the heavy cream, stirring gently to combine. Bring to a gentle simmer.
  5. Combine the cooked gnocchi and crumbled feta cheese, gently stirring to meld the flavors. Season with salt and pepper.
  6. Heat through for an additional 2-3 minutes until everything is heated and aromatic.
  7. Serve warm, topped with freshly grated Parmesan cheese if desired.
