- 4 chicken breasts
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
- Mashed potatoes for serving
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Season the chicken breasts with salt and pepper, then cook for 6-7 minutes on each side until golden brown. Remove from the skillet.
- Add minced garlic and sliced mushrooms to the same skillet, sauté for 3-4 minutes.
- Pour in the heavy cream and add thyme; let simmer until the sauce thickens.
- Return the chicken to the skillet, coating with sauce.
- Serve over mashed potatoes.
Notes
Make the sauce in advance and store it in the fridge. For a lighter version, substitute half of the heavy cream with chicken broth.
