Description

A comforting creamy mushroom chicken dish perfect for busy weeknights.


Ingredients

Scale
  • 4 chicken breasts
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Mashed potatoes for serving

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Season the chicken breasts with salt and pepper, then cook for 6-7 minutes on each side until golden brown. Remove from the skillet.
  3. Add minced garlic and sliced mushrooms to the same skillet, sauté for 3-4 minutes.
  4. Pour in the heavy cream and add thyme; let simmer until the sauce thickens.
  5. Return the chicken to the skillet, coating with sauce.
  6. Serve over mashed potatoes.

Notes

Make the sauce in advance and store it in the fridge. For a lighter version, substitute half of the heavy cream with chicken broth.
