- 8 oz elbow macaroni
- 1 cup pumpkin puree
- 2 cups shredded cheese (cheddar or a blend)
- 2 cups milk
- 4 slices turkey bacon, cooked and crumbled
- 1 cup fresh spinach, chopped
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 1/2 cup bread crumbs (optional for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the elbow macaroni in a pot of boiling water according to package directions; then, drain it and set aside.
- Combine the pumpkin puree, milk, garlic powder, onion powder, salt, and pepper in a mixing bowl, stirring until well mixed.
- Stir in the cooked macaroni, shredded cheese, crumbled turkey bacon, and chopped spinach until everything is evenly coated.
- Pour the creamy mixture into a greased baking dish. If you’d like a little crunch on top, sprinkle the bread crumbs over the mixture.
- Bake in the preheated oven for 25–30 minutes, or until the dish is bubbly and golden brown.
- Allow it to cool slightly before serving to let all those delightful flavors settle.
