- 1 (10oz) bag frozen broccoli rice (about 2 cups)
- 2 cups freshly shredded cheddar cheese
- 1 large egg
- 2 tbsp almond flour
- Seasoning to taste (such as garlic salt)
Instructions
- Cook the broccoli rice in the microwave according to the package directions. Transfer to a fine strainer and squeeze out excess liquid. Set aside to cool.
- Preheat your oven to 400°F and line a large baking sheet with parchment paper.
- In a mixing bowl, combine the drained broccoli rice, shredded cheese, egg, almond flour, and your seasoning. Stir until well blended.
- Form about 16 small balls from the mixture and space them evenly on the baking sheet. Flatten each ball slightly to form round disks.
- Bake for about 15 minutes, or until the bottoms start to brown. Flip each round and bake for another 8-10 minutes until golden and crisp.
- Enjoy hot, plain or with a side of ranch dressing for dipping!
Notes
Make-ahead: Prepare the mixture a day in advance. Store in the refrigerator and bake when ready. Store leftovers in an airtight container for up to 3 days.
