Description

Ingredients

  • 4 tortillas
  • 2 cups leftover mashed potatoes
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Heat the oil in a skillet over medium heat, enough to cover the bottom of the pan.
  2. Combine the leftover mashed potatoes, cheese, green onions, salt, and pepper in a bowl. Mix well until the ingredients come together in a delightful creamy mix.
  3. Spoon the potato mixture onto half of each tortilla and fold over, creating little pockets of joy.
  4. Fry the folded tacos in the hot skillet for 3-4 minutes on each side until golden brown and crispy.
