Ingredients

- 2 slices of your favorite bread (sourdough or whole-grain work wonderfully)
- 1 chicken breast, cooked and sliced
- 2 ounces of creamy brie cheese, sliced
- 2 tablespoons of sweet apricot jam
- Lettuce leaves (any kind you prefer)
- Salt and pepper to taste
- Butter for toasting the bread
Instructions
- Spread the apricot jam on one slice of bread.
- Layer the sliced chicken breast and brie cheese on top.
- Add lettuce leaves and sprinkle with salt and pepper.
- Top with the second slice of bread.
- Heat a skillet over medium heat and add butter.
- Grill the sandwich on both sides until golden brown and the brie is melted.
- Serve warm and enjoy!
