A comforting and hearty meatloaf recipe perfect for busy weeknights and designed for make-ahead convenience.


Ingredients

  • 2 pounds ground beef
  • 1 cup breadcrumbs (can substitute with crushed crackers)
  • 1 cup milk
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 cup ketchup (plus extra for topping)
  • 2 tablespoons Worcestershire sauce
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by lightly greasing it with cooking spray.
  2. Combine the ground beef, breadcrumbs, milk, diced onion, minced garlic, eggs, salt, pepper, oregano, ketchup, and Worcestershire sauce in a large mixing bowl. Use your hands to mix everything together until well incorporated.
  3. Transfer the meat mixture into the prepared loaf pan, shaping it gently into a loaf. Spread extra ketchup over the top.
  4. Bake in the preheated oven for about 60 minutes until the meatloaf is cooked through.
  5. Allow the meatloaf to rest for 10-15 minutes before slicing. Serve warm, garnished with parsley if desired.

Notes

Make-ahead magic: store uncooked meatloaf in a freezer-safe dish and add 15-20 minutes to cooking time if baking from frozen.
