Ingredients

  • 4 cups fresh or canned peaches, sliced
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Combine the sliced peaches with a tablespoon of sugar and set aside.
  3. Mix the flour, granulated sugar, baking powder, and salt in a bowl.
  4. Add the melted butter, eggs, and vanilla extract to the dry ingredients. Mix until just combined.
  5. Pour half of the batter into the prepared pan and spread it evenly.
  6. Layer the peaches over this batter.
  7. Spread the remaining batter on top of the peaches.
  8. Mix together brown sugar, rolled oats, and cinnamon for the crumb topping, then sprinkle over the cake batter.
  9. Bake for 30-35 minutes until a toothpick comes out clean.
  10. Cool before serving; it can be enjoyed warm or at room temperature.

Notes

For variations, consider adding a lemon drizzle or mixing in chocolate chips. Leftover cake can be stored for 2-3 days at room temperature.
