- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup butter, softened
- 1 package (3.4 oz) lemon pudding mix
- 2 cups milk
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar (for whipped topping)
- 1 teaspoon vanilla extract
- Lemon zest (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the flour and powdered sugar in a bowl, mixing with the softened butter until crumbly.
- Press the mixture into the bottom of a 9×13 inch baking dish and bake for 15 minutes.
- Allow to cool.
- Whisk together the lemon pudding mix and milk in another bowl for about 2 minutes until thickened.
- Whip the heavy cream with powdered sugar and vanilla extract in a separate bowl until soft peaks form.
- Fold about 1/3 of the whipped cream into the lemon pudding mix to lighten it, then fold in the remaining whipped cream.
- Spread the lemon pudding mixture over the cooled crust, and refrigerate for at least 240 minutes or overnight.
- Garnish with lemon zest before serving.
Notes
For variations, consider adding fresh berries or coconut to the mix. This dessert can be made ahead of time for convenience.
