Description

A creamy, luscious lemon dessert that brings sunshine to any occasion. Perfect for summer gatherings or a refreshing finish to a hearty meal.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup butter, softened
  • 1 package (3.4 oz) lemon pudding mix
  • 2 cups milk
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar (for whipped topping)
  • 1 teaspoon vanilla extract
  • Lemon zest (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the flour and powdered sugar in a bowl, mixing with the softened butter until crumbly.
  3. Press the mixture into the bottom of a 9×13 inch baking dish and bake for 15 minutes.
  4. Allow to cool.
  5. Whisk together the lemon pudding mix and milk in another bowl for about 2 minutes until thickened.
  6. Whip the heavy cream with powdered sugar and vanilla extract in a separate bowl until soft peaks form.
  7. Fold about 1/3 of the whipped cream into the lemon pudding mix to lighten it, then fold in the remaining whipped cream.
  8. Spread the lemon pudding mixture over the cooled crust, and refrigerate for at least 240 minutes or overnight.
  9. Garnish with lemon zest before serving.

Notes

For variations, consider adding fresh berries or coconut to the mix. This dessert can be made ahead of time for convenience.
