Description

Ingredients

  • 1 cup buttermilk
  • 2 large eggs
  • 2 cups fresh peaches, peeled and diced
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. Mix together the flour, baking powder, salt, sugar, and cinnamon in a bowl.
  2. Whisk together the buttermilk and eggs in another bowl until creamy and well combined.
  3. Combine your wet ingredients with the dry mixture, stirring gently until just combined—be careful not to overmix.
  4. Fold in the diced peaches, ensuring the batter envelops each piece of fruit.
  5. Heat the vegetable oil in a deep fryer or a large pot over medium heat until it reaches 350°F (175°C).
  6. Drop spoonfuls of batter into the hot oil, frying just a few at a time. Cook for about 2-3 minutes on each side, turning them until they are golden brown and crisp.
  7. Remove the fritters from the oil, allowing them to drain on paper towels.
  8. Dust generously with powdered sugar just before serving, and enjoy while warm!
