Description

A whimsical and creamy dessert featuring crushed frosted animal cookies and a luscious cheesecake filling, evoking childhood nostalgia.

Ingredients

Scale
  • 1 1/2 cups frosted animal cookies (crushed)
  • 1/2 cup unsalted butter (melted)
  • 2 cups cream cheese (softened)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/2 cup white chocolate (melted)
  • Sprinkles (for topping)

Instructions

  1. Preheat your oven: Set your oven to 325°F (163°C).
  2. Make the crust: In a bowl, mix the crushed frosted animal cookies and melted butter to form the crust. Press this mixture firmly into the bottom of a springform pan.
  3. Prepare the filling: In a mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the powdered sugar and vanilla, mixing until well combined.
  4. Whip the cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  5. Add cookies: Carefully fold in some of the crushed frosted animal cookies, reserving some for topping later.
  6. Combine: Pour the cheesecake mixture over the crust, smoothing the top out with a spatula.
  7. Bake: Place the cheesecake in the oven and bake for 40-50 minutes, or until the center is set and only slightly jiggly.
  8. Cool and chill: Allow the cheesecake to cool, and then refrigerate it for at least 240 minutes or overnight to let it firm up.
  9. Top it off: Before serving, drizzle with melted white chocolate and sprinkle additional animal cookies and festive sprinkles on top for that extra touch of whimsy.

Notes

Store any leftovers in an airtight container in the refrigerator for up to a week. For clean slices, run a knife under hot water, wipe it dry, and then cut through the cheesecake.
