Description

These Garlic Balsamic Steak Bites combine marinated steak with roasted veggies and a rich balsamic glaze for a comforting weeknight dinner.


Ingredients

  • 2 lb lean steak (trimmed & cubed into 1-inch pieces)
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp balsamic vinegar
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder
  • ¼ tsp crushed red pepper (optional)
  • 3 cloves garlic (minced)
  • 2 tbsp balsamic vinegar (for the glaze)
  • 2 tbsp low-sodium beef broth
  • 1 tsp honey
  • 1 tbsp soy sauce (for the glaze)
  • 1.5 lb baby gold potatoes (quarterd)
  • ½ tbsp olive oil (for the veggies)
  • ½ tsp salt (for the veggies)
  • ½ tsp black pepper (for the veggies)
  • ½ tbsp garlic powder (for the veggies)
  • 1 tsp paprika
  • 12 oz fresh green beans (trimmed)
  • ½ tbsp olive oil (for the green beans)
  • ½ tsp salt (for the green beans)
  • ½ tsp black pepper (for the green beans)
  • ½ tbsp garlic powder (for the green beans)

Instructions

  1. Marinate the steak: In a bowl, combine cubed steak, olive oil, soy sauce, balsamic vinegar, salt, black pepper, garlic powder, and crushed red pepper (if using). Let it marinate for at least 15 minutes.
  2. Preheat your oven to 400°F (200°C). Toss quartered baby gold potatoes and green beans with olive oil, salt, black pepper, garlic powder, and paprika. Spread them on a baking sheet and roast for 25 minutes.
  3. Heat a skillet over medium-high heat and sear the marinated steak bites for 3-4 minutes on each side until browned.
  4. Add minced garlic, balsamic vinegar, beef broth, soy sauce, and honey to the skillet. Let it simmer until slightly thickened.
  5. Serve the steak bites over the roasted potatoes and green beans, drizzling the balsamic glaze on top.

Notes

Leftovers can be stored in an airtight container for up to 3 days in the refrigerator.
