Description
These Garlic Balsamic Steak Bites combine marinated steak with roasted veggies and a rich balsamic glaze for a comforting weeknight dinner.

- 2 lb lean steak (trimmed & cubed into 1-inch pieces)
- 1 tbsp olive oil
- 2 tbsp soy sauce
- 2 tbsp balsamic vinegar
- ½ tsp salt
- ½ tsp black pepper
- ½ tbsp garlic powder
- ¼ tsp crushed red pepper (optional)
- 3 cloves garlic (minced)
- 2 tbsp balsamic vinegar (for the glaze)
- 2 tbsp low-sodium beef broth
- 1 tsp honey
- 1 tbsp soy sauce (for the glaze)
- 1.5 lb baby gold potatoes (quarterd)
- ½ tbsp olive oil (for the veggies)
- ½ tsp salt (for the veggies)
- ½ tsp black pepper (for the veggies)
- ½ tbsp garlic powder (for the veggies)
- 1 tsp paprika
- 12 oz fresh green beans (trimmed)
- ½ tbsp olive oil (for the green beans)
- ½ tsp salt (for the green beans)
- ½ tsp black pepper (for the green beans)
- ½ tbsp garlic powder (for the green beans)
Instructions
- Marinate the steak: In a bowl, combine cubed steak, olive oil, soy sauce, balsamic vinegar, salt, black pepper, garlic powder, and crushed red pepper (if using). Let it marinate for at least 15 minutes.
- Preheat your oven to 400°F (200°C). Toss quartered baby gold potatoes and green beans with olive oil, salt, black pepper, garlic powder, and paprika. Spread them on a baking sheet and roast for 25 minutes.
- Heat a skillet over medium-high heat and sear the marinated steak bites for 3-4 minutes on each side until browned.
- Add minced garlic, balsamic vinegar, beef broth, soy sauce, and honey to the skillet. Let it simmer until slightly thickened.
- Serve the steak bites over the roasted potatoes and green beans, drizzling the balsamic glaze on top.
Notes
Leftovers can be stored in an airtight container for up to 3 days in the refrigerator.
