Ingredients

- 1 cucumber, diced
- 2 tomatoes, diced
- 1/2 red onion, finely chopped
- 1/2 cup olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- Juice of 1 lemon
- 3 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley or basil for garnish (optional)
Instructions
- In a large bowl, combine the white beans, cucumber, tomatoes, red onion, olives, and feta cheese.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
