Description

A delightful dish showcasing golden grilled zucchini slices topped with creamy goat cheese, fresh basil, and a drizzle of honey. Perfect for summer dining!


Ingredients

Scale
  • 5 medium zucchinis
  • Salt
  • 1 Tbsp olive oil or avocado oil
  • 1/3 cup goat cheese, crumbled
  • 2 Tbsp fresh basil, chopped
  • 1.5 Tbsp honey
  • Pepper, to taste

Instructions

  1. Remove the ends from the zucchinis and slice them into 1/2-inch pieces, lengthwise.
  2. Lay the zucchini slices on a plate and sprinkle with salt. Set aside for 20 minutes.
  3. Pat the zucchini dry using a cloth or paper towel.
  4. Heat your grill or grill pan to medium-high.
  5. Brush olive oil or avocado oil onto both sides of each zucchini slice.
  6. Place the zucchini slices onto the grill and cook for about 10-15 minutes, flipping halfway through.
  7. Remove the zucchini from the grill once tender and set on a plate.
  8. Sprinkle with crumbled goat cheese and freshly chopped basil.
  9. Drizzle honey over the top and season with salt and pepper.
  10. Enjoy the harmonious blend of flavors!

Notes

Make ahead and store zucchini in the fridge until ready to grill. Any leftovers can be stored in an airtight container in the refrigerator for up to three days.
