Description

A cozy summer delight that brings together grilled zucchini, creamy goat cheese, fresh basil, and a drizzle of honey for a refreshing and elegant dish.


Ingredients

  • 5 medium zucchinis
  • Salt
  • 1 Tbsp olive oil or avocado oil
  • 1/3 cup goat cheese, crumbled
  • 2 Tbsp fresh basil, chopped
  • 1.5 Tbsp honey
  • Salt + pepper, to taste

Instructions

  1. Begin by removing the ends from the zucchinis, then slice each one lengthwise into 1/2-inch pieces. Spreading the sliced zucchini onto a plate or cutting board, apply salt liberally. Set aside for 20 minutes to let the excess water drain out and the zucchini to become perfectly tender.
  2. After 20 minutes, pat the zucchini slices dry with a clean cloth or paper towel.
  3. Preheat your grill or grill pan to medium-high heat. Brush both sides of each zucchini slice with olive oil or avocado oil.
  4. Place the slices onto the grill and cook for 10-15 minutes, flipping halfway through.
  5. Once your zucchini is perfectly grilled, remove it from the grill and arrange it nicely on a large serving plate.
  6. Sprinkle the crumbled goat cheese and freshly chopped basil across the top.
  7. Drizzle honey over the zucchini and season with additional salt and pepper as desired.

Notes

Make-Ahead Advice: You can prep the zucchini and season it up to a day in advance. Just store it covered in the fridge and grill it fresh when ready to serve!
