- 1 lb ground turkey
- 3–4 medium sweet potatoes, peeled and diced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup chicken broth (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Heat olive oil in a large skillet over medium heat. Add onions and garlic, sauté until softened.
- Add ground turkey, paprika, salt, and pepper. Cook until browned.
- Layer diced sweet potatoes in a large casserole dish.
- Top with the cooked turkey mixture, spreading evenly.
- Pour chicken broth over layers if using, then sprinkle cheese on top.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes.
- Let it cool slightly before serving.
Notes
You can prep this casserole the night before; just pop it in the oven when ready to bake. For added crunch, sprinkle breadcrumbs on top before baking.
