Description

Ingredients

  • 1 lb ground turkey
  • 34 medium sweet potatoes, peeled and diced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a large skillet over medium heat. Add onions and garlic, sauté until softened.
  3. Add ground turkey, paprika, salt, and pepper. Cook until browned.
  4. Layer diced sweet potatoes in a large casserole dish.
  5. Top with the cooked turkey mixture, spreading evenly.
  6. Pour chicken broth over layers if using, then sprinkle cheese on top.
  7. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes.
  8. Let it cool slightly before serving.

Notes

You can prep this casserole the night before; just pop it in the oven when ready to bake. For added crunch, sprinkle breadcrumbs on top before baking.
