Description

A warm and comforting black bean soup that’s perfect for chilly autumn nights.


Ingredients

Scale
  • 2 cans black beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups vegetable or chicken broth
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat.
  2. Add the chopped onion and bell pepper; cook until softened (about 5 minutes).
  3. Stir in the minced garlic, cumin, and chili powder; cook for 1 minute until fragrant.
  4. Add the black beans, diced tomatoes, and broth, giving everything a good stir.
  5. Bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, optionally garnished with fresh cilantro or creamy avocado.

Notes

This soup can be made a day in advance and stored in the fridge. Leftovers can be stored for up to 4 days or frozen for up to 3 months.
