- 1 cup enchilada sauce
- 1 cup black beans, drained and rinsed

Instructions
- Preheat your oven to 350°F (175°C).
- Mix together the shredded chicken, cottage cheese, black beans, corn, diced bell peppers, cumin, chili powder, salt, and pepper in a large bowl.
- Pour half of the enchilada sauce into the bottom of a baking dish.
- Layer the chicken mixture on top of the sauce, spreading it out evenly.
- Pour the remaining enchilada sauce over the top, ensuring everything is well-covered.
- Cover the dish with foil and bake for 20-25 minutes, or until heated through and bubbling.
- Serve topped with slices of creamy avocado and a sprinkle of fresh cilantro for a pop of color and flavor.
