Description

A cozy, nutritious breakfast option packed with protein, perfect for busy mornings or meal prep.


Ingredients

Scale
  • 4 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced vegetables (bell peppers, spinach, etc.)
  • Salt and pepper to taste
  • Optional herbs (chives, parsley, etc.)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the eggs and cottage cheese until well combined and creamy.
  3. Stir in the shredded cheese, diced vegetables, salt, pepper, and any optional herbs.
  4. Grease a muffin tin or line it with muffin liners.
  5. Pour the egg mixture evenly into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes, or until the egg bites are set and lightly golden on top.
  7. Allow to cool slightly before removing from the muffin tin and serve warm.

Notes

These egg bites can be made in advance and stored in the fridge for up to 5 days. Leftovers can be frozen for up to 2 months.
