- 1 lb fresh carrots, peeled and cut into sticks
- 3 tablespoons unsalted butter, melted
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon fresh thyme or parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
- In a large mixing bowl, combine the melted butter, honey, minced garlic, salt, and black pepper, stirring until mixed.
- Add the carrot sticks to the bowl and toss them until coated in the marinade.
- Spread the carrots on the prepared baking sheet in a single layer.
- Roast for about 20-25 minutes, stirring halfway through, until tender and caramelized.
- Remove from the oven and garnish with fresh thyme or parsley before serving warm.
Notes
For a zesty kick, add lemon juice or swap honey for maple syrup. Leftovers can be stored in an airtight container for up to 3 days.
