Description

A comforting side dish of roasted carrots, infused with honey, garlic, and butter, perfect for any family gathering or weeknight dinner.


Ingredients

  • 1 lb fresh carrots, peeled and cut into sticks
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh thyme or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. In a large mixing bowl, combine the melted butter, honey, minced garlic, salt, and black pepper, stirring until mixed.
  3. Add the carrot sticks to the bowl and toss them until coated in the marinade.
  4. Spread the carrots on the prepared baking sheet in a single layer.
  5. Roast for about 20-25 minutes, stirring halfway through, until tender and caramelized.
  6. Remove from the oven and garnish with fresh thyme or parsley before serving warm.

Notes

For a zesty kick, add lemon juice or swap honey for maple syrup. Leftovers can be stored in an airtight container for up to 3 days.
