A quick and delicious weeknight dinner featuring tender chicken marinated in honey garlic sauce, paired with roasted sweet potatoes and green beans.

- 4 boneless, skinless chicken breasts
- 2 large sweet potatoes, peeled and cubed
- 1 pound green beans, trimmed
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Whisk together honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper in a small bowl.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- Preheat the oven to 400°F (200°C).
- Spread the cubed sweet potatoes on a lined baking sheet, drizzle with olive oil, and season with salt and pepper.
- Roast sweet potatoes for about 15 minutes until they start to soften.
- Remove the baking sheet from the oven and push the sweet potatoes to one side. Place the marinated chicken on the other side and add the green beans around them.
- Drizzle any remaining marinade over the chicken and vegetables.
- Bake for 20-25 minutes until chicken reaches 165°F (75°C) and sweet potatoes are tender.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best texture.
