Description

A quick and delicious weeknight dinner featuring tender chicken marinated in honey garlic sauce, paired with roasted sweet potatoes and green beans.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 1 pound green beans, trimmed
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Whisk together honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper in a small bowl.
  2. Marinate the chicken breasts in the mixture for at least 30 minutes.
  3. Preheat the oven to 400°F (200°C).
  4. Spread the cubed sweet potatoes on a lined baking sheet, drizzle with olive oil, and season with salt and pepper.
  5. Roast sweet potatoes for about 15 minutes until they start to soften.
  6. Remove the baking sheet from the oven and push the sweet potatoes to one side. Place the marinated chicken on the other side and add the green beans around them.
  7. Drizzle any remaining marinade over the chicken and vegetables.
  8. Bake for 20-25 minutes until chicken reaches 165°F (75°C) and sweet potatoes are tender.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best texture.
