Ingredients

  • 14 ounces smoked sausage, sliced into ½-inch rounds
  • 2 large sweet potatoes, peeled and chopped into 1-inch cubes
  • 1 large head broccoli, cut into bite-sized florets
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • ¼ cup honey
  • ¼ cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon cornstarch mixed with 1 tablespoon of water

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Toss the sweet potato cubes with olive oil, salt, and pepper, then spread on the baking sheet.
  3. Roast the sweet potatoes for 15 minutes.
  4. Combine honey, soy sauce, minced garlic, and vinegar in a saucepan. Simmer over medium heat.
  5. Whisk in the cornstarch slurry, cooking for 1-2 minutes until thickened. Remove from heat.
  6. Add the sliced sausage and broccoli to the pan, drizzling half the sauce over the top.
  7. Return the pan to the oven, roasting for another 15-20 minutes until tender.
  8. Drizzle the remaining sauce over the dish and toss. Serve immediately.
