- 14 ounces smoked sausage, sliced into ½-inch rounds
- 2 large sweet potatoes, peeled and chopped into 1-inch cubes
- 1 large head broccoli, cut into bite-sized florets
- 1 tablespoon olive oil
- Salt and pepper, to taste
- ¼ cup honey
- ¼ cup low-sodium soy sauce
- 4 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- 1 teaspoon cornstarch mixed with 1 tablespoon of water
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Toss the sweet potato cubes with olive oil, salt, and pepper, then spread on the baking sheet.
- Roast the sweet potatoes for 15 minutes.
- Combine honey, soy sauce, minced garlic, and vinegar in a saucepan. Simmer over medium heat.
- Whisk in the cornstarch slurry, cooking for 1-2 minutes until thickened. Remove from heat.
- Add the sliced sausage and broccoli to the pan, drizzling half the sauce over the top.
- Return the pan to the oven, roasting for another 15-20 minutes until tender.
- Drizzle the remaining sauce over the dish and toss. Serve immediately.
