- 8 oz white chocolate, chopped
- 1/2 cup heavy cream
- 1–2 tablespoons dried lavender
- 2 tablespoons honey
- 8 oz white chocolate (for coating)
Instructions
- Heat the heavy cream and dried lavender in a saucepan over medium heat until it simmers. Remove from heat and let it infuse for about 15 minutes. Strain the mixture to remove the lavender.
- Pour the hot cream over the chopped white chocolate in a bowl and let it sit for a few minutes to melt. Stir until smooth and silky.
- Add honey to the mixture and stir until well combined, infusing every morsel with sweet floral notes.
- Refrigerate for about 120 minutes or until the mixture is firm enough to scoop.
- Once firm, scoop out small amounts of the truffle mixture and roll them into balls.
- Melt the additional white chocolate for coating. Dip each truffle in the melted chocolate and let them set on a parchment-lined tray.
- Allow to cool completely before serving.
Notes
These truffles can be made a day in advance and stored in the refrigerator. They last about a week in an airtight container.
