Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 2 cups pasta (such as elbow or shell)
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Brown the ground beef in a large pot over medium heat until cooked through. Drain excess fat.
  2. Add the diced onion and minced garlic, sautéing until soft and translucent.
  3. Stir in the sliced carrots and celery, cooking for an additional 5 minutes.
  4. Now it’s time to add the diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Bring to a boil.
  5. Add the pasta, then reduce heat to a gentle simmer. Cook until pasta is al dente, about 8-10 minutes.
  6. Serve hot topped with freshly grated Parmesan cheese.

Notes

This soup can be made ahead and stored in the fridge for up to 3 days. Freezes beautifully without the pasta.
