- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups beef broth
- 2 cups pasta (such as elbow or shell)
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Brown the ground beef in a large pot over medium heat until cooked through. Drain excess fat.
- Add the diced onion and minced garlic, sautéing until soft and translucent.
- Stir in the sliced carrots and celery, cooking for an additional 5 minutes.
- Now it’s time to add the diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Bring to a boil.
- Add the pasta, then reduce heat to a gentle simmer. Cook until pasta is al dente, about 8-10 minutes.
- Serve hot topped with freshly grated Parmesan cheese.
Notes
This soup can be made ahead and stored in the fridge for up to 3 days. Freezes beautifully without the pasta.
