- 2 cups cooked chicken, shredded
- 1 cup cooked turkey bacon, crumbled
- 1/2 cup ranch dressing
- 8 oz cream cheese, softened
- 1 cup shredded cheese (cheddar or mozzarella)
- Low-carb tortillas
- Salt and pepper to taste
- Cooking oil for frying (optional)
Instructions
- In a large bowl, combine the shredded chicken, crumbled turkey bacon, ranch dressing, cream cheese, and shredded cheese. Mix until everything is well combined.
- Warm the low-carb tortillas in a dry skillet or microwave just until pliable.
- Spoon a portion of the chicken mixture onto each tortilla, then roll them up tightly to form taquitos.
- If frying, heat cooking oil in a skillet over medium heat. Fry the taquitos until they’re golden brown and crispy, about 3-4 minutes on each side.
- If baking, preheat the oven to 400°F (200°C). Place the taquitos on a baking sheet and bake for about 15-20 minutes until crispy and slightly golden.
- Serve them hot with extra ranch dressing on the side for dipping.
Notes
You can prepare the filling and roll the taquitos the night before. Store in the fridge and bake or fry when needed.
