Instructions
- Preheat your oven to 350°F (175°C) and prepare your baking sheets with parchment paper.
- In a large mixing bowl, cream together the sugar and butter until light and fluffy—about 3-5 minutes.
- Add in the flour, baking powder, and vanilla extract, mixing until everything is well combined to form a soft dough.
- Shape the dough into koala shapes and use chocolate chips for eyes.
- Place the shaped cookies on the baking sheet and bake for 10-12 minutes until lightly golden.
- While the cookies are baking, halve the jalapeños and remove the seeds if desired.
- Mix the cream cheese and cheddar cheese until creamy and well-blended.
- Fill each jalapeño half with the cheese mixture.
- Roll the jalapeños in breadcrumbs and place them on a baking sheet.
- Bake for about 20 minutes until the poppers are golden and bubbly.
- Serve your koala cookies and jungle jalapeño poppers on a platter.
