Description

A cozy and satisfying weeknight dinner featuring baked potatoes filled with seasoned meat and delicious toppings.


Ingredients

  • 2 large potatoes
  • 1 lb ground beef or turkey
  • 1 taco seasoning packet
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1 cup salsa
  • 1/2 cup chopped green onions
  • 1 avocado, diced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and bake the potatoes for about 45 minutes or until tender.
  2. While the potatoes are baking, cook the ground beef or turkey in a skillet over medium heat, stirring in the taco seasoning and water according to the packet instructions.
  3. Once the potatoes are done, slice them in half lengthwise and fluff the insides with a fork.
  4. Load each potato half with the cooked meat, then top with shredded cheese, sour cream, and salsa.
  5. Sprinkle chopped green onions and diced avocado on top, and season with salt and pepper before serving.
